Roasted Mediterranean Salad Bowl

For this week’s recipe, we have a Roasted Mediterranean Salad Bowl- the perfect weeknight dinner! This recipe features lots of yummy vegetables and uses many ingredients you may already have in your kitchen. You could cut the recipe and make it just for yourself or do what is directed below and share with 3-4 of your close friends!


What you’ll need:

  • 1 bag of spinach

  • 1 red onion

  • 1 bell pepper

  • 1 large zucchini

  • Hummus

  • One bag of Small Yukon Gold Potatoes

  • Garlic powder

  • Onion powder

  • Salt pepper

  • Paprika

  • Olive oil


What you'll do:

  1. Wash potatoes and cut them into quarters

  2. Put them on a baking sheet, lightly coat the potatoes in olive oil, and sprinkle on garlic powder, onion powder, salt, pepper, and paprika to taste

  3. Preheat the oven to 450 and put the potatoes in for 30-35 minutes or until fork tender (put a fork in the potato to make sure it’s soft)

  4. Chop the zucchini, bell pepper, and onion and sauté the veggies on medium heat in olive oil

  5. Season with salt and pepper to taste

  6. Put a hefty layer of spinach in a bowl and spoon veggies and potatoes over top

  7. Top with a dollop of hummus and enjoy!
